Most olive oils on the shelf have been filtered to extend shelf life and clarify appearance. We don’t do that. Our olive oil is unfiltered and cold-pressed, which means nothing is stripped away during processing. Unfiltered EVOO retains up to 5% more polyphenols than filtered alternatives, including compounds like hydroxytyrosol and oleocanthal that drive olive oil’s anti-inflammatory and antioxidant effects. Cold pressing also means no heat is applied during extraction, so the oil’s natural nutrients stay fully intact.
